These Andalusian oils are the fruit of the same gestures perpetuated by a family for seven generations. Made from forgotten species of olives, from desert olive trees, these oils are at the heart of a project to rehabilitate an ecosystem located in a protected natural reserve.
THE OLD BALSAMIC VINEGARS
NO SUGAR ADDED
Our vinegar, made from a single variety of grape using traditional methods, has no added sugar and brings out the full complex aromatic range of the Pedro Ximenez grape.
In order to offer it the nobility of a great sherry vintage, we call on the services of great Spanish oenologists as well as a producer who works according to the strict replication of the maturing methods of the great Sherry Wines.
