Maison DEHESA pays tribute to Rosa, an olive oil producer in Cordoba, who was the first in Spain to refuse chemical inputs to her land in the 1970s to preserve the last desert olive trees in Europe, in a now protected nature reserve called "Laguna de Fuente de Piedra". 

 

Here she produces an incredible green fruity organic olive oil, fiery and ultra herbaceous, with a peppery finish. It exacerbates the iodine notes of seafood and the vegetable notes of vegetables. 

 

Its non-greasy texture is reminiscent of Japanese olive oils, as it does not stick to the palate at all and knows how to be discreet to enhance the centrepiece of a dish! 

 

This oil is a must-have for the new generation of chefs, as it is the best ally of vegetable cooking.
