Pigs of the Iberico breed (75%), which gives the hams an intense tenderness and marbling, are raised in the richest dehesas of Spain for a gourmet diet and a sublimated fat of our patanegra!


Our pigs are doubled in size at 24-36 months minimum so that they can enjoy two seasons of Bellota. The maturing in the mountain air doubled at 42 months ensures a structured, delicate taste without any salt note.

  • Traceability: DOP Guijuelo = label of traceability and guarantee of the respect of the minimum criteria of breeding and maturing (breed, extensive breeding, feeding with bellota, minimum maturing time required). The European DOP label certifies our commitment to breeding and maturing.


    Integrated production method: Natural feed based on mountain pasture flora, Mediterranean flora and oak acorns. Occasional food supplements based on cereals (corn, barley, oats), without fattening meal.
