Our pigs are reared in the richest dehesas in Spain for a gourmet diet and a sublime fat. Our pigs are doubled in age at 24-36 months so that they benefit from two seasons of Bellota. The maturing in the mountain air, doubled at 48 months, ensures a structured, delicate taste without any hint of salt.
