These green Andalusian olives come from an ancestral "forgotten" variety and are cultivated in sustainable agriculture. Hand-picked, they offer an incomparable bitterness and minerality.


These old desert olive trees from which they originate are nobly deployed in the heart of a project to rehabilitate a protected natural ecosystem, which we support.


We respect the traditional preparation of de-boning, which consists of pricking the olives and then preserving them in a marinade of garlic, red peppers, oranges and carrots from local production.
