Carefully open the tin and the lid. Using cutlery (preferably wooden), remove the anchovies, drain them briefly and place them on a plate. Wait for them to come to temperature (you should not feel any difference in temperature between the anchovy and your finger) and discover the iodine notes and nutty flavours in their simplest form.

 Here you will have more or less the same minerals/trace elements/essential fatty acids/vitamins as in fish roe, in a lower but still significant concentration and for a much lower price. Again for reasons of omega 3, fatty fish are the best in terms of nutrition, and anchovy is a fatty fish, but it is also a small fish with a shorter life span and is not as far down the food chain as other fatty fish such as salmon, for example, which has the advantage, which is not negligible in these times, of having meat that is less polluted by heavy metals and microplastics, and this is all the more true here since Dehessa is very particular about the origin of its fish. 

Alberto has been a fisherman for five generations on the Spanish Basque coast. Every night, he leaves with his small boat from the port of Santona, in search of the largest anchovies and sardines in the deep sea. With this special attention, our fisherman protects the renewal of the marine species and allows us to work the nets in a slow maturation process in brine, unique in the world.
