From an ecosystem preserved in the area of the mouth of the Ebro, in the Mediterranean Sea, our eel is sacrificed according to the Japanese tradition of Ikéjimé in order to maintain a crunchy texture and preserve the fish's collagen. This texture is then guaranteed by a natural smoking technique using olive wood.
